Case study · The Brasserie at Darleys · Derby, UK · Feb 2026, ongoing

# A fine-dining institution took a risk. The numbers say it paid off.

Darleys spent years as one of Derby's best-known fine-dining restaurants. In February 2026 it became The Brasserie at Darleys: relaxed, fire-led, social. Wonder Works built the change inside our F&B Partnership: the complete rebrand, the new website, every social channel, and the operations work behind the scenes. Six months of data later, Facebook impressions are up 229%, website visitors are up 316%, and 2,588 people asked Google for driving directions. Every number on this page is organic. Not one paid social advert has been run.

When we promoted brunch, we did it like this. Derby noticed.

## What happened at Darleys

###

What does a rebrand actually risk?

Everything a restaurant has already earned. Darleys had years of reputation as a special-occasion, white-tablecloth room, and a rebrand asks loyal regulars to love something new. Some didn't. Among the 49 Google reviews of the period sits a two-star that calls it "a once great restaurant ruined." We're showing you that review on purpose, because change costs something. What the owners bet, and what the numbers now show, is that the new Darleys speaks to a far bigger room: reviews up 113% in volume, reach multiplied, and a Tuesday crowd the old model never saw.

###

What did we actually build?

The full F&B Partnership, working on both halves of the business. The brand: Fire & Water, a relaxed-luxury identity built on the contrast between the open Konro grill and the River Derwent outside the windows, from logo system to menus to wax seals. The website: darleys.com rebuilt from scratch, with menus, events, live music programme, bookings and an AI chatbot that answers guests around the clock. The socials: Facebook, Instagram and a Google Business Profile run properly for the first time. And the operations half, which was in progress when we wrote this in July 2026: the P&L rebuilt line by line, and a new Toast POS going in so every decision from menu pricing to rota gets made on real numbers.

Source: Metricool and Google Analytics, 1 Feb to 23 Jul 2026. One more line from the analytics worth your time: chatgpt.com and guide.michelin.com both appeared as referral sources sending visitors to darleys.com in that period. AI search was recommending this restaurant. That's what a properly structured website earns.

###

Not a penny of paid social

Every impression, click and direction request above was earned, not bought. No boosted posts, no paid social adverts, nothing. Reach that's earned proves the content deserves it, and it keeps working when the budget stops. This entire result is organic.

###

What's happening behind the scenes?

This is the half of the partnership you don't see. In July 2026, as Darleys' F&B Partnership, we were rebuilding the P&L and installing a new Toast POS across the operation. Once it's live, every plate, shift and supplier invoice feeds one set of numbers, which means menu engineering with real margins, rotas built on real covers, and decisions made on data instead of gut feel.

## How do you fill a riverside terrace every single Sunday?

A new poster every week, a musicians pipeline, and a voice that sounds like a person, not a venue.

## What does relaxed luxury look like on paper?

One identity, three logos, and everything a brasserie touches: menus, offers, table talkers.

## What we learned, and what happened next

###

What we'd do differently

The honest bit, as every case study here has: we'd have brought the old guard along more deliberately. The rebrand launch spoke loudly to the new audience and more quietly to the regulars who'd loved Darleys for years, and a few of the period's harder reviews are the receipt for that. Today every rebrand we run gets a bridge plan for existing customers from day one: tell them first, honour what they loved, invite them in early.

This is the [F&B Partnership](https://wonderworksdesign.net/services/fb-partnership) at work: the marketing you can see and the [web design](https://wonderworksdesign.net/services/web-design) and operations you can't.

###

What happened after July 2026?

Between 1 March and 30 September 2026 The Brasserie at Darleys' Facebook page was seen 622,297 times by 129,885 viewers, all of it organic and up 208.2% on the period before. The "Big day at Darley Abbey" post from 8 July 2026 had been seen 93.4 thousand times by the end of September. Still not a penny of paid social.

## Questions

### What did Darleys buy from Wonder Works?

The Brasserie at Darleys bought the F&B Partnership: the full marketing department (brand, website, socials, design) plus fractional operations leadership. It's ongoing, not a one-off project.

### Was The Brasserie at Darleys' growth paid for?

No. Not one paid social advert has been run for Darleys. Every number in this case study is organic, including the 622,297 Facebook views between 1 March and 30 September 2026.

### Did the Darleys rebrand upset existing customers?

Some, honestly. A handful of reviews mourn the old fine-dining Darleys, and we've left that visible in this case study because it's true. The owners made a brave, informed call, and the growth since says the new room found its people.

### What is the operations side of the Darleys partnership doing?

In July 2026 we were rebuilding Darleys' P&L line by line and installing a Toast POS across the operation, so pricing, rotas and purchasing run on real numbers.

### Can I see the Darleys work?

Yes. Visit darleys.com, built by Wonder Works, or better, book a table: The Brasserie at Darleys, Darley Abbey Mills, Derby DE22 1DZ. Order the flat iron. Thank us later.
